Taste It Thursday ~ Dodd-Cobb AMAZING Tabouli Salad

Our M.O.M friends over at Fit and Healthy State of Mind have some great options for us busy M.O.Ms to eat well especially during the holiday season.

Check out this easy and AMAZING (as its name states) recipe for the Dodd-Cobb Toabouli Salad

Ingredients
• ¼ cup of couscous – prepared as directed
• 3 large bunches of minced fresh parsley leaves (stems removed as much as possib)
• Minced onion to taste (purple)
• 4-5 tablespoons olive oil
• 4-5 tablespoons fresh lemon juice
• Ground sea salt to taste (proceed with caution; a little goes a long way)
• Cubed cucumber chunks, halved cherry tomatoes, minced mint
